Coffee Freshness: Why Is It Such an Important Criterion?

Coffee freshness is a fundamental element that determines the taste quality of every cup we enjoy.

Defined by the preservation of the product's organoleptic qualities, that is, its aromas, flavors, and textures, freshness is what distinguishes an exceptional coffee from an ordinary coffee. But how do we measure and maintain this freshness, and why is it so crucial?

What is coffee freshness?

Coffee freshness refers to its state after roasting, when it still retains its original properties. Freshly roasted coffee that is consumed quickly best preserves its aromas and flavors.

At Shouka, we guarantee that the coffee sold was not roasted more than two months before being put on sale, thus ensuring optimal freshness.

In the world of "Specialty Coffee," where quality is paramount, freshness plays a central role. However, measuring this freshness is no easy task and often remains subjective.

The key stages of freshness

Roasting marks the beginning of the development of coffee aromas. During this process, hundreds of chemical compounds are formed, notably carbon dioxide (CO2), which is essential for flavor development.

As soon as roasting is finished, coffee begins to lose freshness: its aromas gradually evaporate and the CO2 escapes. This is why it is crucial to consume coffee shortly after roasting to enjoy all its qualities.

The importance of storage

Proper coffee storage is essential to prolong its freshness. It is imperative to choose an appropriate storage location to prevent accelerated degradation. Contrary to some misconceptions, it is not recommended to store coffee in the refrigerator. The latter can promote condensation, which damages the aromas.

Coffee should be stored in a dry place, away from light and at room temperature, ideally below 25°C. High temperatures accelerate the oxidation of aromas and the loss of CO2, thus altering the quality of the coffee.

For long-term storage, such as 6 to 8 months, the freezer can be used, but only in airtight conditions and for whole bean coffee. However, it is advisable to consume the coffee well before this period to enjoy its best aromas.

Whole bean coffee vs ground coffee

It is important to note that whole bean coffee stores much better than ground coffee, up to 10,000 times better in terms of aroma preservation. Indeed, ground coffee, more exposed to the air, loses its taste qualities much more quickly. At Shouka, as an artisanal roaster, we strongly recommend buying whole bean coffee and grinding it just before consumption for an optimal experience.

Packaging and storage: preserving the essentials

Coffee packaging plays a crucial role in preserving its freshness. Using airtight, opaque packaging equipped with degassing valves helps slow down the degradation process. Otherwise, an unsuitable container will lead to a rapid loss of freshness and an alteration of taste.

Towards optimal freshness

To guarantee the best coffee experience, it is important to understand the different stages of roasting and storage. At Shouka, we only sell fresh coffee, roasted at most two months before being put on sale, thus guaranteeing superior quality. Although freshness is difficult to measure precisely, good storage practices and the rigorous selection of beans ensure an optimal sensory experience.

In conclusion, coffee freshness is not just a characteristic, but a quality commitment. To savor every nuance of your coffee, it is crucial to follow good storage practices and favor whole bean coffee.
