Coffee is one of the most consumed beverages in the world. However, how many can claim to know the origin, diversity, and richness of this natural product they love to drink? Arabica or robusta? Which origins or regions? Slow filtration or espresso ? With or without milk? Dozens of countries produce coffee, offering a multitude of different terroirs and many species of trees. Furthermore, there are an incredible number of ways to roast green coffees, grind them, filter them, and then serve them…
The richness of coffee is infinite.
The “ bean to cup ” coffee
The term “ bean to cup ” comes from English and literally means “ from bean to cup ”. At Shoukâ, we control the entire coffee production chain, which means: greater respect for coffee farmers with pay above market rates, greater freedom to select quality specialty coffees, and a greater ability to bring out the coffee’s aromas through artisanal roasting.
We treat coffee as a single-origin product, made from a single variety, grown on a single plot of a single farm, and processed using a single fermentation method. It is important to us to have full traceability of the product (farm, producer, variety, terroir).
Artisanal roasting
for our specialty coffees
After careful sourcing with our partners, the green coffee beans arrive at Shoukâ in large 60–70 kg jute sacks. This is when the roasting process begins, which determines 50% of the coffee’s aromas. All our coffees are specialty coffees and are all of the Arabica species.
Our Shoukâ roasters roast the coffee beans using artisanal methods, with two 12 kg and 25 kg roasters in Chamonix and Cluses (Haute-Savoie). The roast is tailored to the bean’s profile, after several cuppings (tastings to assess the quality of a coffee), based on the coffee’s characteristics and its intended use (espresso, filter, etc.). Our mission is always to bring out the coffee’s aromatic notes to the fullest, while maintaining consistency and uniformity from one roast to the next.
Our roasters conduct regular quality checks on both green and roasted coffee to ensure consistency and uniformity in the cup.
