Everything you need to know before buying coffee online
At Shoukâ, all the coffees we offer are specialty coffees, 100% arabica, which come from producers and cooperatives located mainly in the following regions
South America (Colombia, Brazil, Peru)
Central America (Guatemala, Costa Rica, Honduras, El Salvador)
Africa (Ethiopia, Uganda, Kenya, Rwanda)
Asia (Indonesia)
We work closely with producers to ensure sustainable and fair farming.
Specialty coffee is high-quality coffee that is traceable from production to cup and graded according to specific criteria. In particular, it must have very few defects, receive a score above 80/100 according to the SCA, and be roasted appropriately to best preserve its aromatic qualities.
The grind size depends on your brewing method:
Espresso: very fine grind
Manual filter (V60, Chemex): medium to coarse grind
French press: coarse grind
Moka pot: fine grind
We can grind your coffee according to your preferences, or send it to you whole bean. When ordering online, you can choose the grind size best suited to how you prepare your coffee.
At Shoukâ, the roast is tailored to each coffee, depending on the characteristics of the bean and the desired brewing method. Our goal remains the same: to best reveal the aromatic notes unique to each coffee, while ensuring a consistent roast from one batch to the next. We therefore work with several roast profiles:
Slow methods: designed to highlight the finesse and aromatic complexity of the coffee.
Espresso: suited to a shorter and more intense extraction.
Filter / Espresso (omniroast): a versatile profile, designed to shine in both filter and espresso.
Store your coffee in an airtight container, away from light, moisture, and odors. Avoid the refrigerator. Ideally, consume it within 2 to 3 weeks after opening to fully enjoy its aromas. Therefore, upon receipt of your order, be sure to store the coffee properly to best preserve its aromatic qualities.

FAQ
What is the difference between an artisanal roaster and industrial coffee?
An artisanal roaster works in small batches and adapts the roasting process to the characteristics of each coffee. At Shoukâ, we seek to reveal the unique qualities of each origin rather than achieve a standardized flavor. Terroir, variety, and the bean's aromatic profile remain at the heart of our work.
Can you buy Shoukâ coffee and chocolate online?
Yes. Our online store allows you to buy coffee and chocolate online directly from the website.
There, you can find our specialty coffees, whole bean or ground, our bean-to-bar chocolate bars, our chocolate treats, as well as our teas, herbal infusions and gift ideas.
Why buy your coffee from a roaster?
Buying coffee from a roaster allows you to discover coffees selected for their origin, freshness, and flavor profile. At Shoukâ, you can choose your specialty coffee whole bean or ground, depending on your brewing method and tasting preferences.
Can we visit the Shoukâ workshop?
Yes. We offer coffee tasting and chocolate-making workshops in Annecy and Lyon, as well as chocolate factory tours in Chamonix.
These experiences allow you to discover the world of coffee and chocolate, the different stages of production, and gain a better understanding of the concepts of "specialty coffee" and "bean-to-bar" chocolate.
