Why choose artisanal roasting?

Before ending up in your cup, coffee beans undergo several important transformations, including roasting.

Roasting is the art of cooking green coffee beans to create unique aromas and flavors. We invite you to discover the 5 main benefits of artisanal roasting.

  • Product knowledge

By choosing to consume coffee roasted near you, you know where the product you buy comes from and who processes it.

The artisan roaster masters every step of the roasting process. They have a perfect knowledge of the beans they have carefully selected themselves. They will therefore be able to advise you as pertinently as possible to meet your needs and preferences.

  • Freshness

Coffee is a living product; just a few days after roasting, it begins to oxidize and lose its aromas. Unlike the coffee found in supermarkets, with good artisanal roasters, you know the roasting date. This date is the main criterion for enjoying absolute freshness and an optimized taste.

Note: in the 48 hours following roasting, the beans continue to degas, so it is advisable to wait two days before enjoying your coffee.

  • A gentle process

To develop its full potential, the artisan roaster chooses to cook their beans at a low temperature (200°C), in contrast to large industrial volumes roasted in 2 minutes at nearly 1000°C…

Artisanal roasting is indeed a time-consuming process. This allows control over every step, from drying to the development phase, through the caramelization of the beans (Maillard reaction).

  • Diversity

Just like a chef, each artisan roaster develops their own recipes to enhance their coffee and bring out the best possible flavor profile: fruity, chocolatey, full-bodied, floral…

They can adapt their roasting profile. Depending on the origin and type of coffee, they will choose to roast it longer to prepare good espressos or roast it for a shorter time for filter coffees.

There is something for every taste !

  • A unique experience

Entering a roasting workshop means entering a world where the raw material is respected.

Seeing the roaster slowly roast their coffee beans with love and respect for the product is a unique sensory experience that will leave you with only one desire: to return.

At Shoukâ

At Shoukâ, we chose to place the roaster at the heart of our shop to share our expertise and our love of (good) coffee with you.

After each roasting, we taste the coffees (Cupping) to master our profiles as best as possible and offer you the best coffee possible based on the origin characteristics of the green coffee.

Did you know?

Each country has a different coffee culture and develops preferences for a certain type of roasting.

In the south, for example, in Italy, a darker roast is chosen to develop a more bitter, stronger body, ideal for espressos. On the contrary, in Nordic countries, lighter roasts are preferred to preserve the delicate fruit aromas. In France, we fall somewhere in the middle; this is called a monk's robe roast.
