What is bean-to-bar chocolate?
The Art of Bean-to-Bar Chocolate
At Shoûka, we are proud to be among the few French chocolatiers who have mastered the art of bean-to-bar chocolate making. But what exactly does this term mean?
Bean-to-bar refers to a process in which every stage of chocolate production, from the cacao bean to the finished bar, is controlled by the artisan. This process allows us to guarantee exceptional quality and full traceability of our products.
Did you know: In France, out of 5,000 “chocolatiers,” only 2% make their own chocolate

A Recent Emergence, an Ancient Tradition
The Origins of the Movement
The bean-to-bar concept emerged in the United States in the 2000s. At that time, a few enthusiasts decided to rediscover and master every stage of chocolate production. The movement gained momentum with the appearance of more accessible machinery around 2010, thus facilitating the entry of new artisans into the field.
An Industrial History
Historically, chocolate production has been dominated by large industrial companies. As early as the late 19th century, these companies developed large-scale manufacturing processes, leaving little room for small artisans. This industrial expertise was inaccessible to independent chocolatiers for a long time, until the emergence of the bean-to-bar movement.
Bean to Bar: The Fundamental Differences
Chocolatiers vs. Confectioners
The term “chocolatier” is often used ambiguously. According to Stéphane Bonnat, “a chocolatier should be a bean-to-bar manufacturer. Artisans who buy and work with pre-processed chocolate should be called confectioners.” This distinction is important to recognize true artisanal expertise.
The Importance of the Distinction
Differentiating bean-to-bar chocolatiers from other artisans is crucial for several reasons:
- Authenticity of Flavor: A bean-to-bar chocolatier controls the entire process, thus guaranteeing a unique product.
- Traceability: The cacao beans used are selected and processed directly by the artisan, ensuring complete transparency.
- Support for Producers: Direct relationships with cacao producers allow them to be paid fairly and promote sustainable practices.

The Stages of Production at Shoûka
Selection and Sorting of Beans
It all begins with the careful selection of cacao beans. At Shoûka, we work directly with producers we know personally. Once the beans are received, they are sorted by hand to remove any impurities and ensure optimal quality.
Roasting
Roasting is a crucial stage that develops the cacao beans' aromas. We adjust the roasting temperature and duration according to the characteristics of each batch of beans to reveal their full aromatic potential.
Cracking and Grinding
The roasted beans are then cracked to separate the husks from the kernels, called cacao nibs. The nibs are ground to obtain a thick paste called cacao mass, which is then refined until it achieves a smooth texture.
Conching
Conching consists of mixing and aerating the chocolate at a controlled temperature. This stage, which can last several hours or even several days, improves the texture and refines the chocolate's aromas.
Tempering and Molding
Tempering is essential to obtain shiny, crisp chocolate. It consists of heating and cooling the chocolate in a controlled manner to stabilize the cocoa butter crystals. The chocolate is then molded into bars and cooled to take its final shape.
Did you know: Our chocolate at Shoûka is free of additives and, above all, free of lecithin. It is important to note that 99% of the chocolates available on the market contain added lecithin.
Packaging
Each chocolate bar is wrapped by hand in environmentally friendly materials. The careful packaging ensures that the chocolate retains all its freshness and aromas until it reaches you.
